Vegetable Rice recipe

This vegetable rice recipe is filling, nutricious and delicious all at he same time.

Serve four and take about an hour to complete (30 minute preperation, 30 minute cooking)


  • 4 cups rice (basmati is preferable but plain will do here)

  • 5-6 Cups water

  • 2 Cloves

  • 2 Bay leaves

  • Small handfull of Cashew nuts

  • 3 tsp Garlic paste

  • 1 Onion (sliced)

  • 1 Tomato

  • Small stick of Cinnamon

  • 1 cup Coconut milk

  • 8 tsp Ghee clarified butter

  • 1 cup of Peas

  • 2 cups of carrot and beans

  • Fresh Coriander

In a large pan, heat up some ghee (or clarified butter) and add the cinnamon, cardamom, bay leaf and the cloves. Gently fry for 2-4 minutes then add the onions and saurte for a few minutees more.

Add the garlic paste, finely chooped tomatoes and green chillies. Wait another 5 minutes while cooking on a gentle heat, then add the vegetables.

Add the coconut milk, water, shredded coriander and then the rice.

Cover the pan and then cook for another 15 - 20 minutes or untill the rice is ready. Do not stir or move during this period. Very important.
