Lamb Rogan Josh Recipe

Just alter the amount of ingredients to suit your needs but bare in mind that this Lamb Rogan josh recipe will last for days in the fridge.

Lamb Rogan Josh, Indian Rogan josh

Rogan Josh Ingredients

  • 18 oz boned lamb, cubed

  • 1 tsp poppy seeds

  • 1 tsp cumin seeds

  • 1/2 tsp grated nutmeg

  • Peppercorns (4 - 6)

  • 1 tbsp coriander (cilantro) seeds

  • small cinnamon stick

  • 1 tsp cardamom seeds

  • 1 tbsp ground almonds

  • 1 tbsp desiccated (shredded) coconut

  • 1/4 tsp mace

  • 6 tbsp or oil

  • 5 cloves garlic, crushed

  • 1 onion chopped finely

  • small chuck of ginger (grated or chopped finely)

  • Bay leaves

  • 1 cup of water (200ml

  • 1/2 tsp ground red chili

  • 1/2 tsp turmeric

  • 225g tomatoes (tinned or fresh)

  • Sea salt

  • 75 ml Plain yoghurt

Lamb Rogan Josh Method

Mix together the coriander, poppy seeds, cumin, cloves and peepercorns and fry gently in a large frying pan for a few minutes. Then add the cinnamon and cardamom and let cool.

Once cooled it all needs to be ground in a powder.

Next the nutmeg, cocconut, mace and almonds need to be fried untill they have turned a light brown colour.

Next the onions need to be fried in the oil for about 5 minutes when the garlic, ginger and bay leaves are added. These should also turn a golden brown colour.

Add the lamb and fry untill browned and then add the spices that you crushed earlier, the tumeric and a bit of salt. Next add the tomatoes and cook untill it turn fairly thick, (any liquid should be soaked up into the mixture).

Once thickened, add the yogurt and water and then bring to the boil and let cool. Cover it and let it simmer for about 10 minutes or untill the meat has turned nice and soft.

Serve with fresh chapattis and rice and garnish with a little coriander and fresh green chillis.
