Dum Aloo Recipe

Dum Aloo is classic kasmiri dish and can be literaly be translated as 'pressure cooked potatoes'. This dish is a very fundamental part of Indian cuisine helps makes up the basis of all Indian food all over the world. I hope you enjoy it.


Ingredients

  • 1 Cup of peas

  • 1 large tbsp Yoghurt

    • 1/2kg Potatoes, Boiled

    • 2 Large Onions

    • 4 tsp Cornflour

    • 500g tin of chopped tomatoes

    • 1/4 kg grated Paneer (cheese)

    • 1/2cup chopped Coriander leaves

    • 3 - 4 green Chilli

    • 1 clove of Garlic

    • Small Chunk of Ginger (grated)

    • 6 Cloves

    • Oil

      Method

      Lets start with grating the cheese and boiling the peas. Good start! OK now mix them togeether well and sthen set aside for later.

      Heat some oil in a large pan and throw in the chopped green chillies, slat, grated ginger, cloves and some garam masala.

      Add the onion. When the onion starts to go brown add the yoghurt and the tin of tomatoes. Simmer for 5 - 10 minutes or untill it turns into a nice thick gravy.

      For this Dum Aloo recipe you need to cut the potatos in half and hollow out the middle. Fill them with cheese and peas you mixed together earlier. Cover in cornflower and salt and then deep fry.

      Serve with some Indian bread and garnish with sprig of fresh coriander.
