Simple Vegetable Curry Recipe

Here we have a simple vegetable curry recipe to feed 4 people. All in all it takes about an hour to complete from start to finish including cooking time.

Ingredients

• Vegetable oil

• 1 medium red onion, peeled and chopped

• Half a butternut squash, peeled and diced

• 1 courgette, diced

• 100g mushrooms, quartered

• 400ml water

• Salt and pepper

• 1 red pepper, diced

• 150g cauliflower, broken into florets

• 600ml curry base sauce

Method

As the header says this is a simple vegetable curry so is pretty straight forward to make.

Using a big pan, fry the onion in the vegetable oil for about 10 minutes. Then add all of the other vegetabels and stir.

Add the curry base sauce and simmer gently for about 25 - 30 minutes. Take care not to over cook the vegetables.

It is important for this dish not to become to thik so if it starts to get claggy simpy add some water.

Season with some salt and pepper and serve with rice!

It's as easy as that!
