Pilau Rice Recipe

Pilau is the most common Fried Rice Dishes in India. Pilaus evolution through the ages have seen a huge selection of variations of this classic recipe but here is the origional.


Ingredients

  • 500gm Rice (basamati is preffered but not essential)

  • 4 Cloves

  • 1 small Cinnamon Stick (not essential)

  • 1/2 salt

  • Pinch of tumeric

  • 60g Butter or Ghee

  • 1 Onion sliced

  • 2 Bayleaves

  • 1 teaspoon Cumin Seeds

  • 4 - 5 Cardamoms

  • 1l water

Method

This method couldn't be much easier but if you still think you may fail you can always boil the rice instead of frying it.

In a medium saucepan, melt the butter or ghee and throw in the cloves, cumin, bayleaves, cinnamon and cardamom.

Give it a couple of minutes and then put in the sliced onion and some tumeric. Fry gently untill the onion is slightly brown.

Wash and drain the rice and add to the pan, saute for no more than two minutes but careful it is not to hot as the rice will start to crack and break.

Add the water and salt and cook with a lid on for about 25 minutes. DO NOT stir it during this period, leave it alone. This is very important.
